The best Mac and Cheese recipe
Hi all. This is supposed to be a space blog and I haven't posted about space yet. I promise the next article I will write will be related to space. Until then, I am very happy to share my favorite Mac and Cheese recipe.
This Mac and Cheese recipe is vegan and is actually better than any Mac and Cheese I have had before. I truly enjoy this recipe, it is filling and won't let anyone starve. It is also one of my favorite meal to introduce vegan cuisine to people who are reluctant to veganism/vegetarianism.
Ingredients
375g of macaroni
Sauce :
1/2 cup of cashews
1 1/2 cups of vegetable broth
1/4 cup of tapioca starch
1/4 cup of vegetable oil
1/4 cup of nutritional yeast
1 tsp of cider vinegar
1 tsp onion powder
1 tsp garlic powder
1 tbsp of maple syrup
1 tsp of salt
Directions
Cook pastas according to the instructions provided on the label.
Soak the cashews in hot/boiling water for 15 minutes. Pour water when done.
Blend the ingredients until the mixture is homogene.
Pour the mixture in a pan. Cook until it boils and mix constantly.
Let sit for one minute.
Add the pastas to the mixture. Cook for one more minute to heat the pastas.

Nutrional yeast?
If you have been vegan for a long time, you probably know what nutrional yeast is. It seems to be an ingredient that is to my knowledge not so widespread and it is worth to be discovered. You might have heard that vegans lack proteins and such things in their alimentation, but nutrional yeast makes it very far from the truth. Indeed, 15 grams of nutrional yeast contains 8 grams of proteins (which is a very high ratio, as beef would only contain 3.5 grams of proteins for the same weight). 15 grams of nutrional yeast also contains 880% of the daily value of Vitamin B12, which is pretty awesome.
